I love fall–love the gorgeous colors, the elfin light in the sky, the crisp air. Even spiderwebs look better in October. But I think my favorite part of fall may be the pumpkins.
There’s jack o’ lanterns, of course, and pumpkin pie. Then there’s pumpkin curry soup with diced zucchini (delish!) and pumpkin muffins and toasted pumpkin seeds. Lately I’ve been wondering if I can somehow find a way to add pumpkin to meringue cookies.
If I sound a little pumpkin crazy, at least I’m not launching pumpkins into the air, then waxing poetic about how it feels. Though I must admit, it does sound pretty awesome.
I think our one lonely pumpkin the garden produced should be feeling anxious about now, but whether that’s because I want to mash him, bake him, carve him or launch him, I couldn’t say. Perhaps I’ll have to recruit a few of his orange friends?
